The main staple of the Serrano diet was the acorn. The acorns of the Black Oak were most prized because of their lower tannin content and sweeter taste. The acorns were ground into flower. Water was used to leach the tannic acid from the acorn flour. This removed the bitter taste. The flour was made into porridge known as wiich.
